Ingredients
- 1 cup of uncooked black bean rotini
- 1 cup of sweetcorn
- 1/2 cup of cubed feta
- Tablespoon of chopped parsley
- 2 tablespoons of extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon of runny honey
- 1 teaspoon of Dijon mustard
- Black pepper
Directions
Boil the pasta for around 7 minutes.
While the pasta cooks, mix your salad dressing (EVOO, balsamic vinegar, honey, dijon mustard).
Drain the pasta and combine with the sweetcorn, feta and dressing.
Scatter parsley and grind black pepper on top (optional).
