Ingredients
- 2kg chicken bone / pork bone
- 1 pc onion
- 1 pc ginger
- 3 pcs shallots
- 1 stalk cinnamon stick
- 1 pc star anise
- 4 pcs clove
- 1gr coriander seeds
- salt
- pepper
- sugar
- 200g chicken breast / pork loin
- 20g basil
- 50g bean sprouts
- 20g long coriander
- 20g vietnamese lettuce
- 1pc chili
- 1 pc lime
- 20g spring onion
- 100g rice noodles
- 2tbs chili sauce
- 50g fish sauce
- 20g pho sauce / black bean sauce
Directions
1) Boil chicken bone/pork bone in a pot of water. After the water comes to boil, pour away the water to make sure all the impurities are washed away.
2) Pour water over the bones and bring it to the boil again. When the water starts to boil, turn the heat down to the smallest possible flame and allow it to simmer. Remove any scum that rises to the top of the soup.
3) Grill all herbs and put in the stock. Reduce the heat to low for about 4 hour.
4) Prepare chicken breast/pork loin, garnish: basil, lettuce, beansprout, chili, lime, spring onion.
5) Purify the stock.Then season with fish sauce, salt and little sugar.
6) Put phở (rice noodles), shredded chicken breast/pork in a bow, and add our flavor stock.
7/ Serve with chili and black bean sauce.
