Ingredients
- 1 cup of cooked quinoa
- 1 handful of mixed leaves (mint, parsley & coriander)
- 2 spring onions
- 2 garlic cloves
- ¼ cup pine nuts
- juice of half a lemon
- salt / pepper/ sumac / olive oil
Directions
- Cook the quinoa and set aside.
- In a bowl mix all the ingredients.
- Add lemon juice, salt, pepper and olive oil.
- Stir everything together and serve!
