Ingredients
- 2 cups of shredded raw papaya
- 3 cherry tomatoes
- 1 ½ lemons juiced
- 2 tablespoons fish sauce (vegetarians can use soy sauce)
- 1-2 tablespoons graterd jaggery
- 4 cloves of garlic, minced
- 3-4 birds eye red chillies finely chopped up
- Few juliennes of carrots
- 2 long bean halved tops and tails removed
- Few long sprigs of coriander ¼ cup roasted peanuts (or cashews)
Directions
This salad would traditionally be made in a large mortar and pestle, I use a large ceramic bowl and put on some gloves to mix, toss and turn this beautiful aromatic salad around. Made in a big mixing bowl, using your hands to really squish all of the ingredients together.
So here is how it goes… Place the papaya, lemon, juice, fish sauce, jaggery, garlic and chillies into a large ceramic dish. Mix it around well squishing the salad around and making sure it is well coated with all the ingredients.
Add the tomatoes and toss around again.
Garnish with long beans, julienned carrots, peanuts and a few sprigs of coriander, and serve!
